    Sestafoglia is the brand with which Primafonte Srl produces and markets food products. Born in 2014, after 30 years of experience in the field of aromatic herbs and the manufacturing of semi-finished products for industrial use.
    The experience and quality of the tillage have allowed us to make up to six cuts of basil each year, from which “sestafoglia” (literally “sixth leaf”).
    After receiving excellent feedback from customers from the qualitative point of view in the manufacture of our semi-finished goods, in 2018 we decided to expand our production capacity by creating the sauces and condiments line with the Sestafoglia brand, and keeping the possibility of working in private label, in order to satisfy all customers’ request.
    We are specialized in the processing and the transformation of aromatic plants such as basil, arugula, radicchio, and many others, from which all the recipes of our production come to life.
    Our experience and continuous research guarantee the highest quality, stability and flavour of our products, with particular attention to respect our raw materials.

    The Company

    Raw Materials

    Most of the treated products come from our fields were we grow basil, parsley, rocket and sage. The production of basil alone exceeds 1.000 tons.
    Growing our raw materials directly means that we can guarantee product traceability and sustainability. Furthermore, we are sure to handle the product on the same day of collection, so as to reserve its organoleptic characteristics.

    Semi-Finished Processing

    During the manufacturing procedure, especially that of the basil, the temperature control is fundamental. It has to be kept at a temperature between 10° and 20° in order to maintain its characteristic, as the perfumes and the bright green pigmentation, unchanged. All finished products are stored in compliance with the “Cold Line”.

    To make this possible in Sestafoglia we have 2 refrigerating rooms of 300 cubic meters each with a temperature between 0° and 4°, and an additional 100 cubic meters cell with a temperature of -18° for the conservation of frozen products.

    With the help of our refrigerated vehicles and the support of some selected company, we are able to deliver throughout Italy and abroad quickly and on time.

    Laboratory

    Using our internal LAB, in Sestafoglia, we regularly execute chemical and microbiological analysis on our raw materials and finished goods in order to guarantee compliance with the highest legal and qualitative requirements.

    To guarantee the conformity of our vegetable raw materials, we carry out multi-residual and microbiological analysis before treating; moreover, during the manufacturing process the semi-finished goods are regularly subjected to pH and Aw analysis. The finished product is then scanned by sample by carrying out specific chemical and microbiological analysis

    Certifications

    in compliance with European regulation 852/04 on the hygiene of food products Sestafoglia adopts a self-control based on the HACCP method, thanks to which it monitors the entire production process, ensuring compliance with hygiene and health requirements at all points. The Company also maintains an efficient product traceability system, compliant with European regulation 178/02.

    The company is also certified BIO pursuant to CE regulation 834/2007

    In 2020, the company also obtained certifications in compliance with international BRC e IFS Standards.

    Products

    Semi-Finished

    The Company manufactures various types of semi-finished goods, intended for the food processing industries.
    In the case of basil, the treating begins in our crops: through an accurate cutting procedure only the most tender part of the plant is selected to be processed. The short distance between our plant and the cultivated fields allows the product to be handled as soon as in is cut, thus avoiding the start of oxidation processes and ensuring its high quality. The continuous studies carried out by the company’s team of food technologists have allowed us to expand the range of products available by introducing the production of new semi-finished goods with the goal of satisfying all request.
    All our recipes can be replicated with organic certification.

    Sauces & Condiments

    Our goal with sauces and condiments is to use as few ingredients as possible for each recipe.
    In this way, we want to preserve the originality of the flavours of each ingredient and keep alive the history of excellence of Italian products in the kitchen.
    Eventually, the final goal is to make our customers find a healthy, natural and high quality product that respects the recipes of our tradition on the shelves and at their tables.

    Pesto Alla Genovese

    Green sauce inspired by the Genoese tradition. Made from fresh basil processed within few hours from the harvest, with the addition of Parmigiano Reggiano DOP cheese, extra virgin olive oil, pine nuts and a few other selected ingredients. Our Pesto alla Genovese as well as being an excellent sauce for pasta can also be used as an appetizer together with cheeses and croutons, or as a condiment for the most delicious salads. This product specifically does not undergo a heat-treatment.

    100% Vegetable Pesto

    Bright green sauce inspired by the Genoese tradition, which thanks to the absence of dairy products is also suitable for vegans and vegetarians. Obtained from fresh basil worked within a few hours from harvesting, with the addition of extra virgin olive oil, pine nuts and few other selected ingredients. Our 100% vegetable pesto in addition to being an excellent sauce for pasta can also be used as an appetizer with cheeses and croutons, or as a condiment for the most delicious salads. This product specifically does not undergo a heat-treatment

    Pasteurised Pest

    Dark green sauce inspired by the Genoese tradition. Made from fresh basil processed within Parmigiano Reggiano DOP cheese cashews and a few other selected ingredients. It makes itself heard thanks to the very short list of ingredients that allows each flavour to shine through. Heat-treated product to preserve its shelf life up to 36 months.

    Rocket and walnuts Pest

    Light green sauce made from fresh rocket grown in the field and processed within few hours from the harvest to preserve its quality, with the addition of walnuts and Grana Padano DOP cheese. The rich and intense flavour of our rocket and walnut pesto makes it an excellent match for salads and cheeses. For the audacious, it can also be a great sauce for sandwiches and hamburgers thanks to its captivating consistency. It is also a brilliant sauce for pasta as an alternative to the more classic Sestafoglia Pesto alla Genovese. Heat-treated product to preserve its shelf life up to 36 months.

    Radicchio and Walnut Cream

    Violet-coloured cream inspired by traditional recipes. Obtained from fresh radicchio grown in the field and processed within a few hours from harvesting with the addition of walnuts and a pinch of sugar to weigh the bitterness of the radicchio. Intense and balanced flavour, excellent for risotto but also with white meats, without losing its quality as a great ally for an aperitif with friends. Heat-treated product to preserve its shelf life up to 36 months.

    Mushrooms Cream

    Cream of Champignon and Porcini mushrooms with the addition of fresh parsley grown in the field and carefully worked to preserve its quality. The velvety consistency of this sauce makes it a superb ally in the kitchen, thanks to its versatility. Excellent on sandwiches and croutons for appetizer, with fresh and stuffed pasta, and on red meat. Better to avoid with cakes. Heat-treated product to preserve its shelf life up to 36 months.

    Dried tomatoes cream

    Intense red sauce inspired by the Sicilian tradition, obtained from dried tomatoes, capers and chili peppers. The pungent scent of one of the most loved ingredients in Italian kitchens, the dried tomatoes and the explosive character make this cream very “hot”. Thanks to its strong flavour, it manages to give colour and liveliness to every dish: from white meat to salads. Heat-treated product to preserve its shelf life up to 36 months.

    Pepper sauce

    Yellow, red, and green pepper sauce with the addition of fresh parsley, grown in the field and worked within few hours from the harvest, with the addition of potato flakes for consistency. Strong and easily identifiable flavour, very good with toasted bread or on a salad winking at white meats and light first courses. Heat-treated product to preserve its shelf life up to 36 months
